The key factor in the Ayurveda diet,

in comparison with other popular nutrition models, is that Ayurveda places the person in the centre. Each person has his own individual "dosha-distribution" and his own personal requirements of the foods that are good for him accordingly. What the individual can do with the food available to him is decisive in this respect. The objective is to choose food that can be digested fully by the body and organism. This means breaking food down completely into nutrients for the body and eliminable waste products (mala), to prevent harmful toxins, called ama in Ayurveda, from remaining in the organism.

In Ayurveda, the constitution determines the diet

and which foods are good for you, in other words, which food the organism is capable of best digesting at the moment. This constitution is in turn influenced by Ayurveda resort - ayurveda diet and nutrition factors such as emotional state, the time of the day and the season, or even by the prevailing weather. As you can see, there is no point in categorising food into groups of good and bad without taking into account what each individual can digest with his present metabolism and how this, in turn, effects the current constitution, or doshas. In Ayurveda, the agnis, meaning digestive fire, are responsible for the metabolization of food. They convert the different food items one after the other into the respective tissues.

Listening to your own body

is generally the crucial step in determining the correct ayurvedic diet. How often have we had the experience with our own bodies that a food that was good for us at one time, makes us feel ill or even harms us at another point in time? If you listen to your own body, you can generally tell in advance what is right for you with respect to the ayurvedic diet. Unfortunately we have forgotten to listen to our bodies’ signals because artificially aroused needs drown them out.
